
These basic Italian meatballs are perfect slow-simmered in a rich tomato sauce and served with pasta, or browned in a pan and served with gravy.
Ingredients
- 1 lb ground beef
- 1 large egg
- Grated Parmesan or Romano cheese (or both)
- 4 cloves fresh garlic, crushed (garlic powder or jarred garlic will do in a pinch)
- 1/2 small yellow onion, finely diced (or onion powder)
- 2 tbsp Parsley
- Salt & pepper to taste
- Red sauce (recipe coming soon)
Recipe
Combine all ingredients in a large mixing bowl, mixing gently With your hands until just combined. Over-mixing will results in tough, dense meatballs.
Form into balls of about 2oz each. I sometimes use an ice cream scoop to get them all the same size without measuring.
Meatballs can then be cooked in a skillet, or a sauce. They also freeze well for later use.
